Fan of avocados? This superfood can be so much more than just a dip or topper for tacos and sandwiches. In this creative and filling recipe, avocados finally get the top billing they deserve.

Ingredients

-4 large avocados

-½ cup black beans

-½ cup cherry tomatoes

-¼ red onion

-½ cucumber

-1 bell pepper

-1 lemon, juiced

-1 clove garlic, chopped

-½ tsp chopped parsley

-½ cup hummus

-cayenne pepper

-salt and pepper to taste

Useful tip

The ingredients listed above provide you with a delicious vegan meal. If you want to make it more satiating, add rotisserie chicken, tuna, shrimps, or more black beans. You can also swap hummus for cream cheese.

Directions

Preheat the oven to 400 F. Сut the avocados in halves. Scoop out some of the flesh of each avocado half and add it to a mixing bowl.

Add the hummus, black beans, tomatoes, red onion, cucumber, bell pepper, parsley, lemon juice, and seasonings to the bowl. Mix everything and divide the stuffing into the avocado shells. Bake for 10 minutes and serve.

☝️ Worth mentioning

To stabilize avocado halves, place them face-up in muffin or cucake tins so you can easily add the filling.
