For an easy and nutritious dish, it’s hard to beat chicken salad. Chicken is a healthy and lean meat that contains protein and is low in saturated fat, while veggies provide you with vitamins and fiber.

Ingredients

-2 skinless chicken breasts

-½ cup feta cheese

-1 cup cherry tomatoes

-2 cups lettuce

-¼ red onion

-1 cucumber

-½ cup black beans

-2 bell peppers

-olive oil

-vinegar

-salt, pepper to taste

Useful tip

Customize the ingredients to your liking. Want the salad to be more satiating? Add more chicken and beans. Not a fan of lettuce? Swap for another leafy green.

Directions

Preheat the oven to 425° F. Place chicken breasts and cut bell peppers on a sheet pan and brush them with olive oil on all sides. Season with salt and pepper. Roast for 30 minutes.

Meanwhile, chop lettuce, onion, cucumber, cherry tomatoes, and feta cheese. Combine everything in a bowl and add beans.

Remove chicken and peppers from the oven and let them cool. Either chop or shred your chicken and cut the peppers into small pieces. Add these to the bowl. Drizzle with olive oil and vinegar, and add salt and pepper if desired. Mix everything and serve!

☝️ Worth mentioning

You can grill instead of roast to speed up the cooking time. Just grill the chicken breast for about 4 minutes per side. And don’t forget about the bell peppers!
